Pistachio Muffins

So my local grocery store, HEB, sells the most AMAZING Pistachio Muffins.  I came across this recipe and it's pretty close, so I'm sharing!

Ingredients
  • 1 box butter cake mix
  • 1 package instant pistachio pudding
  • 4 eggs
  • 1 c sour cream
  • 1/4 c water
  • 1/2 c oil
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
Topping
  • 1/2 c sugar
  • 1 tsp cinnamon
  • 1 c chopped pistachio
Directions
  1.  Preheat oven to 350
  2. Mix all the dry ingredients until just combined.  In a separate bowl, mix the eggs, sour cream, water and oil.  Combine with dry ingredients and add vanilla and almond extracts.
  3.  Spray muffin tins(or use paper muffin wrappers). Pour batter into muffin tins ½ full.  Mix topping in a separate bowl and sprinkle on top of batter.
  4. Bake until slightly brown and a toothpick comes out clean.

I am so glad you posted a recipe to the HEB Pistachio Muffins. Each time I go it's either hit or miss as to whether or not their bakery has them. I even call ahead sometimes just to make sure ;-) haha!

I found that 30 minutes+ works best with a muffin tin of 12. Personally, I would like to make these muffins in a muffin tin that only holds six muffins, but the size of the muffins would be larger -- that way I would not only have the delicious recipe of these muffins, but they would also be around the same size as the ones made at the HEB bakery.

Thank you again for posting!

Bethany - does your HEB still make them? Mine doesn't :( Does this recipe really taste like HEB's?
